Ingredients
  

  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 lb ground turkey
  • 2 medium zucchinis chopped
  • 1 red bell pepper diced
  • 1 tsp dried oregano
  • 0.5 tsp thyme
  • salt and pepper to taste
  • 2 tbsp fresh parsley chopped
  • lemon juice or chili flakes optional

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add onion and garlic. Cook for 2 minutes until fragrant.
  • Add turkey. Break it up and cook for 5–7 minutes until no longer pink.
  • Add zucchini, bell pepper, oregano, thyme. Stir and cook for 7–10 minutes.
  • Turn off heat. Add parsley and optional toppings. Serve warm.

Notes

Keeps in fridge for 4 days or freezer for 3 months.
Pairs well with cauliflower rice or lettuce wraps.
For a vegan twist, try using tempeh or mushrooms.
