Ingredients
  

  • 1 small onion halved
  • 1 garlic clove
  • 1 medium carrot peeled and chopped
  • 30 g butter
  • 500 g broccoli florets
  • 600 g vegetable broth
  • 150 g potatoes peeled and diced
  • salt and pepper to taste
  • 120 g old cheddar cheese grated
  • 150 g milk or half-and-half

Instructions
 

  • Add onion, garlic, and carrot to Thermomix bowl. Chop 5 sec/speed 5. Scrape down.
  • Add butter. Sauté 3 min/100°C/speed 1.
  • Add broccoli, potatoes, broth, salt, and pepper. Cook 20 min/100°C/speed 2.
  • Blend 1 min, gradually increasing to speed 8.
  • Add milk and cheese. Blend 30 sec/speed 5 until creamy.

Notes

Use frozen broccoli if needed — no thawing required.
For extra protein, stir in cooked shredded chicken after blending.
Freezes well for up to 3 months. Reheat with a splash of milk for best texture.
