Sweet Potato & Kale Hash

Ingredients
  

  • 1 medium sweet potato diced
  • 2 cups kale chopped
  • 1 small onion chopped
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • salt and pepper to taste
  • 1/2 avocado sliced
  • 1/2 lemon juiced

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add diced sweet potato and cook for 8–10 minutes until golden.
  • Add onion and garlic, cook for 2 more minutes.
  • Stir in chopped kale and smoked paprika.
  • Cook until kale is wilted.
  • Season with salt, pepper, and lemon juice.
  • Serve topped with sliced avocado.

Notes

Make it spicy with a dash of red pepper flakes. Store leftovers in the fridge for 2–3 days.
