Instructions
Heat olive oil in a skillet over medium heat.
Add diced sweet potato and cook for 8–10 minutes until golden.
Add onion and garlic, cook for 2 more minutes.
Stir in chopped kale and smoked paprika.
Cook until kale is wilted.
Season with salt, pepper, and lemon juice.
Serve topped with sliced avocado.
Notes
Make it spicy with a dash of red pepper flakes. Store leftovers in the fridge for 2–3 days.
