Ingredients
  

  • 2 cups pine mushrooms sliced
  • 1 small onion thinly sliced
  • 2 cloves garlic minced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp fresh thyme or ½ tsp dried
  • salt and pepper to taste
  • white wine or veggie broth optional splash for deglazing
  • crusty sourdough, fresh parsley, parmesan to serve

Instructions
 

  • Heat olive oil and butter in a skillet on medium heat.
  • Add onions and sauté for 3–4 minutes until golden.
  • Add garlic and thyme, cook 30 seconds.
  • Stir in pine mushrooms, cook 6–8 minutes.
  • Optional: deglaze with wine or broth.
  • Season with salt and pepper. Serve warm.

Notes

Clean pine mushrooms with a damp towel—don’t soak!
Best served immediately but keeps well in the fridge for 2–3 days.
Serve over toast, wild rice, or mashed potatoes.
