One Pot Macaroni and Beef

A quick and cozy one-pot comfort meal that combines beef, macaroni, tomatoes, and cheese into a hearty dish for busy weeknights.

Ingredients
  

  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 garlic cloves minced
  • 1 lb lean ground beef
  • 1 ½ cups elbow macaroni uncooked
  • 796 ml diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp pepper
  • 3 cups beef broth
  • 1 cup shredded cheddar cheese optional
  • fresh parsley to garnish

Instructions
 

  • Heat oil in a large pot over medium heat. Add onion and cook 3 minutes. Add garlic and cook 30 seconds.
  • Add ground beef, cook until browned. Drain fat if needed.
  • Stir in tomato paste, oregano, paprika, salt, and pepper. Cook 1 minute.
  • Add diced tomatoes (with juice), beef broth, and macaroni. Stir. Bring to a simmer.
  • Reduce heat to low, cover, and cook 12–15 minutes, stirring occasionally, until pasta is tender.
  • Stir in cheese until melted. Garnish with parsley and serve.

Notes

Swap beef for ground turkey or veggie ground for a lighter version.
Add frozen peas or corn in the last 5 minutes for more veggies.
Store leftovers in the fridge for up to 4 days, or freeze for up to 3 months.
