red bell pepper

frozen peas

long grain white rice

chicken broth

soy sauce

honey
salt and pepper

chopped green onion or parsley

Instructions
In a large skillet, heat olive oil over medium heat. Add sliced sausage and brown on both sides, 5–6 minutes.
Add onion, garlic, and bell pepper. Cook for 3–4 minutes until softened.
Stir in rice, broth, soy sauce, and honey. Bring to a gentle boil.
Reduce heat to low, cover, and simmer 18–20 minutes until rice is cooked.
Stir in peas, cover for 5 minutes, then fluff with a fork.
Garnish with green onions or parsley if desired. Serve warm.
Notes
Use any brand of honey garlic sausage. Adjust liquid if using brown rice. Freezes well in portions for up to 3 months.
