One Pot Beef Stew

Ingredients
  

  • 2 lbs stewing beef chuck
  • 1 tbsp flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 3 garlic cloves minced
  • 3 carrots sliced
  • 3 potatoes peeled & cubed
  • 2 cups beef broth low sodium
  • 1 cup water
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp pure maple syrup
  • 1 tsp dried thyme
  • 1 bay leaf
  • 0.5 cup frozen peas optional

Instructions
 

  • Toss beef in flour, salt, and pepper. Brown in oil over medium-high heat. Set aside.
  • In the same pot, sauté onions and garlic until soft.
  • Return beef to pot. Add carrots, potatoes, broth, water, tomato paste, Worcestershire, maple syrup, thyme, and bay leaf.
  • Bring to a boil, reduce heat, cover, and simmer for 1.5 to 2 hours.
  • Add peas in the last 10 minutes. Serve hot with bread.

Notes

Freezes well for up to 3 months.
Add more broth if you prefer a thinner stew.
Try swapping potatoes with sweet potatoes for a twist.
