Ingredients
  

Main Ingredients

  • 1.5 lbs boneless lamb leg or shoulder cubed
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 lemon zest from 1 lemon
  • 0.5 lemon juice juice of 1/2 lemon
  • 1 tbsp fresh rosemary chopped
  • 1 tsp dried oregano
  • salt and pepper to taste

Optional Vegetables

  • cherry tomatoes optional
  • bell peppers optional
  • red onion chunks optional

Instructions
 

  • In a bowl, mix lamb with olive oil, garlic, lemon zest, lemon juice, rosemary, oregano, salt, and pepper.
  • Cover and marinate in the fridge for at least 1 hour or overnight.
  • If using wooden skewers, soak them in water for 30 minutes.
  • Thread lamb (and optional veggies) onto skewers.
  • Grill over medium-high heat for 8–10 minutes, turning often.
  • Let rest for 5 minutes before serving. Enjoy!

Notes

Wooden skewers can burn quickly, so be sure to soak them in water beforehand. Marinating the lamb overnight enhances the flavor even more!
