Ingredients
  

Banana Loaf Batter

  • 3 ripe bananas
  • 1/2 cup unsalted butter melted
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup walnuts or chocolate chips optional

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • Mash bananas in a large bowl.
  • Add melted butter, brown sugar, eggs, and vanilla. Mix well.
  • Add flour, baking soda, and salt. Stir until just combined.
  • Fold in walnuts or chocolate chips if using.
  • Pour batter into loaf pan. Bake 50-60 minutes, until a toothpick comes out clean.
  • Cool in pan for 10 minutes, then transfer to a wire rack.

Notes

Freeze ripe bananas ahead of time to use later. For extra moisture, don’t overmix the batter.
