Ingredients

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced, any colour
  • 1 cup long-grain white rice
  • 1 can diced tomatoes 398 mL, with juices
  • 2 cups beef broth
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • salt and pepper to taste
  • 1 1/2 cups shredded cheddar cheese
  • fresh parsley optional, for garnish

Instructions
 

  • Heat a large deep skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a wooden spoon. Drain excess fat if desired.
  • Add the diced onion, garlic, and bell pepper. Cook for 3–4 minutes until softened.
  • Stir in rice, diced tomatoes with their juices, beef broth, smoked paprika, oregano, salt, and pepper. Mix well.
  • Bring to a gentle boil, reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender and most of the liquid is absorbed.
  • Sprinkle shredded cheddar cheese on top. Cover again for 2–3 minutes until cheese is melted. For a golden top, place under broiler briefly.
  • Garnish with fresh parsley if desired. Serve hot straight from the skillet.

Notes

Customize it with frozen veggies, switch up the cheese, or make it ahead and freeze. Great for leftovers and picky eaters!
